Minestrone Soup
(Very filling soup - adapted from diabetic recipe)
1 pound ground beef (80/20)
1 cup onion, diced
1 cup celery, diced
1 cup zucchini, diced
1 cup cabbage, diced
1 cup potatoes, diced
1 cup carrots, diced
28-oz. can diced tomatoes
6 cups water
2 teaspoons salt
1 teaspoon Worcestershire sauce
15.5-oz. can red kidney beans
1/2 cup uncooked elbow macaroni
In a large cooking pot, fry meat with onion and celery until onion is translucent. Add zucchini, cabbage, potatoes, carrots, tomatoes, water, salt, Worcestershire sauce, and kidney beans. Bring to a boil, then simmer over medium heat for 30 minutes. Add macaroni and cook for another 10 to 12 minutes. Serves 12 to 14.
